Description of Research Interests

Research activities are aimed at integrating ruminant nutrition and meat science to improve the quality, cutability, palatability and consumer acceptability of beef and lamb. Current research projects include: altering animal nutrition to increase conjugated linoleic acid content of beef, assessing meat quality and fatty acid composition of beef finished on pasture based systems, and examining meat quality attributes of hair sheep genetics.
